The Island's Environment, Food and Agriculture Minister insists the meat plant will be more commercially focused.
A new operating company - the Isle of Man Meat Company Ltd - will meet later this week to play the way forward after a Government tender failed to find a third-party operator.
Geoffrey Boot hopes the new company will make quick progress to make the plant provide better returns for farmers, as well as lessening the cost to the taxpayer.
The meat plant will discuss a new purchasing process for the plant with producers, butchers and retailers later this week.
The company is led by DEFA and includes representatives from the Fatstock Marketing Association, industry and commerce.
